ginger mojitos

I love ginger and I love mojitos. So when I was looking for a drink recipe to take to a friend’s house for a party and stumbled on this one, I stopped immediately. I didn’t care that mojitos are a decidedly summery drink and I was taking them to a New Year’s Eve party. There would be mint. There would be ginger.

Screw the drinking rules. (Are there drinking rules?)

Oh. Apparently, I have long flaunted the drinking rules. Just try the mojitos, people.

Ingredients:

  • 1 cup granulated sugar
  • 1 cup water
  • 1/3 cup packed grated ginger (use the large holes of a box grater to grate it.)
  • 2 cups tightly packed fresh mint leaves
  • 1 750ml bottle white rum
  • 1-1/2 cups fresh lime juice (gonna need a buncha limes, people)
  • Ice
  • Club soda
  • More fresh mint leaves

In a small saucepan, bring the sugar, water and ginger to a boil. Stir and boil over high heat for about 5 minutes to dissolve the sugar. Remove from the heat, add the 2 cups of mint leaves and cover. Allow the mixture to come to room temperature.

Strain the syrup into a container (a 2 quart mason jar is perfect), discarding the solids. Add the rum and lime juice and stir. Cover and refrigerate.

To serve, fill a 10 oz glass with ice, pour in 1/2 cup of the mojito mix, top with club soda and stir. Add a sprig of mint and enjoy.
