Nothing could drag me out of whatever book I was immersed in reading better then the scent of hot sausage simmering on the stove. The moment that aroma made it’s way through the house and past my closed bedroom door, I’d turn my book face down on the bed and wander, still half dazed and lost to the world of Narnia or some such magical literary place, to the kitchen. Sometimes, if Mama wasn’t around, I’d steal a piece of bread and dip it into the bubbling sauce for a sneaky little taste.
It’s such a fabulous and easy sandwich recipe. I’d have one sausage sandwich and one sauce sandwich. Delicious.
- 1 small onion, chopped fine
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 large can diced tomatoes
- 1/4 cup water
- 1 bay leaf
- 1 teaspoon salt
- 1 teaspoon sugar
- Crushed red pepper
- 1 package hot or mild italian sausage
- 1 package good sandwich rolls
In a Dutch oven, sauté the onion and garlic in the oil until the onions are translucent. Add remaining ingredients (except the sausage) and simmer for an hour, uncovered. Give it the occasional stir.
Cut the sausages into bun-length pieces and toss them into the sauce. Simmer another hour, uncovered. If the sauce appears to be getting too thick, add a bit more water.
