I’ve never really liked sweet pickles in any way, shape or form. In fact, I used to be so highly suspicious of any flecks of green in a sandwich salad that I wouldn’t even try said salad just in case the green things might be sweet pickles.
I also think Miracle Whip is one of the most evil things ever created. My father loves the stuff, but I hate it so much that I once had a full-on come apart because I touched some when I was rinsing his lunch plate.
It’s possible I have some issues.
I do like sandwich salads very much. I just don’t trust those made by anyone who isn’t me. I can learn to trust. Our little town has a sandwhich shop called Southern Salads, and I have been known to pick up the occasional tub of chicken or ham or tuna salad. For the most part, though, I make my own.
Ham salad seems to be the most problematic, and it’s probably because I venture into a whole new world of flavor when I make my ham salad. A world with a bit of bite. Nothing sweet about this world. Nosirree Bob. My preferred method of consumption is club crackers, but this does make a fabulous sandwich.
I never measure. I just toss and taste until it’s right.
- Leftover ham, processed into a fine mince
- Chili sauce (I make my own and keep it in a mason jar in the fridge, but the bottled stuff is ok, too)
- Minced cornichons
- Prepared horseradish
- Dijon mustard
Toss it all in a bowl and mix well. Adjust any and all to your own taste : )
