Let me just start out by saying that I don’t like these. Not even a little bit. Making these does not remotely feel like cooking or baking and peanut butter is a thing I only like in Thai food or these fabulous peanut butter cookies Miss Charlotte made when I was growing up. Not to mention that they’re made entirely with commercical processed products. ~delicate shudder~
That being said, I make them every damn Christmas. My son Cody really seems to like them, and they’re always a major hit on cookie trays I make for the world in general. So I’m including the recipe here, and grumbling while I do it.
- 1 cup peanut butter
- 1/2 package butterscotch chips
- 1 large can chinese noodles
Melt the peanut butter and butterscotch chips together in a heavy saucepan over low heat. Turn off heat and add the noodles when melted. Stir well, coating all the noodles. Drop by tablespoons (ish) onto a waxed paper lined cookie sheet. Place in refrigerator to harden.
